<p>1 can Coconut Milk
<p>3 Carrots, sliced thin
<p>3 cups Filtered Water
<p>¼ cup chopped Fresh Lemongrass
<p>¼ cup Fresh Lime Juice
<p>1 tbsp Cornstarch
<p>1 tbsp Coconut Oil
<p>1 tbsp Fresh Ginger, grated
<p>¼ &#8211; ½ tsp Red Pepper Flakes
<p>Sea Salt to taste</p>

<p><b>Method:</b>
<p>In order to prepare tasty Shrimp in Coconut Milk, you first need to heat oil in a large pan and then add ginger, garlic along with pepper flakes. Cook it for a while stirring continuously and then add in it lemongrass, carrots, water and coconut milk.
<p>Next step is to mix 2 tbsp water with cornstarch to make a smooth paste and add this paste to the prepared mixture and bring it to a boil. After this, break pasta in half and add it to the pot and reduce the heat and cook on sim heat till pasta and carrots are tender.
<p>Now, you need to add shrimp to the pot and cook for 1 minute and remove it from heat and add in it lemon juice and salt. Last step is to ladle the prepared dish in serving bowls and garnish it with scallions or flaked coconut.</p>
