8 ounces spaghetti (or other) pasta

4 ounces smoked salmon, cut into bite sized pieces

2 tbsp olive oil

2 cloves garlic, minced

2 tbsp Lemon zest (divided into 1 Tbsp and 1 Tbsp)

2 tbsp chopped fresh parsley or dill

1 tbsp Lemon juice

1/4 cup pine nuts

1/3 cup chopped shallots (can substitute onions)

1/3 cup dry white wine (can substitute pasta cooking water with a Tbsp of lemon juice)

1/4 cup cream

Fresh ground black pepper

Salt

Method:

To make Smoked Salmon Pasta, you first need to boil water in a pot and brown the pine nuts separately. After this add these nuts in a single layer in a large skillet and heat stirring occasionally for a while then remove the nuts and set aside.

Next step is to add 1tbsp salt with every 4 quarts of water in boiled water and then add in it pasta. Boil on high heat for 8 to 10 minutes. Also, prepare the sauce side by side by heating olive oil in a pan and add shallots and garlic and then cook for 2 minutes. After this add in it lemon juice, white wine and 1tbsp of lemon zest. Turn off the heat when the sauce is creamy.

When the pasta is done, drain the excess liquid keeping 1 cup of the liquid aside. Then, add the smoked salmon and toasted pine nuts along with parsley and the remaining lemon zest. If the pasta is very dry, then add the pasta liquid. Serve hot with ground black pepper seasoning.
