Ingredients:

2 lbs. Tuna steak cut into six equal slices about 5 oz. each
Equal parts melted butter, lime juice and hot fish stock for basting.
Lime juice
Lemon quarters

Parsley
Season salt to taste
Pepper to taste
Nutmeg to taste
Thyme to taste

1 bay leaf

1 1/2 cups Heavy cream

2 tbsp chopped Fresh parsley

1 tbsp Fresh thyme, or 1 teaspoon dried thyme

1 tbsp Olive oil

1 1/2 tsp Salt

1/4 tsp Freshly ground black pepper

1 tsp Old Bay (optional)

1 tsp Butter

1/4 Purple onion, chopped finely

1 Celery stalk, chopped finely

1/3 cup of cottage cheese

2 tbsp minced fresh parsley

2 tbsp of Mayonaise

1 tsp Dijon mustard

1 tsp capers

Juice of half of a lemon

Pinch or two of dill

Slices of French bread, lightly toasted
