4 large Portobello Mushrooms

2 ounces Goat Cheese

2 ounces Neufchatel Cheese softened

1 ounce Gruyere Cheese shredded

1 cup diced Tomatoes

¼ cup Green Onions finely chopped

½ pound lump Crab Meat Shell pieces removed

3 tbsp Panko Bread Crumbs

2 tbsp Parmesan Cheese freshly grated

2 tbsp light Mayonnaise

¼ tsp Seafood seasoning

½ Lemon juiced

1 dash Ground Red Pepper

Cooking Spray

Method:

In order to prepare Spicy Crab Portobellos, you first need to preheat the oven at 425 F. Then, line a baking sheet with foil and coat it lightly with a cooking spray. After this remove and discard the stems from portobellos without breaking the mushrooms. Now, use a spoon to gently scrape the brown gills from undersides of portobellos. It is now time to place the mushroom caps on the baking sheet and keep aside.

Once, this is done, beat goat and Neufchatel cheeses together until they become creamy and smooth. Now, add mayo, lemon juice, green onions and red pepper along with seafood seasoning and beat hard to combine them all. Add in crab meat, cheese and tomatoes. After this divide the mixture evenly in all mushrooms and sprinkle 1 tbsp panko over all the stuffed mushrooms and top them with a little sprinkle of Parmesan cheese.

Bake the mushrooms for 15-20 minutes or till the tops are lightly browned.
